HERBES DE PROVENCE

1 tablespoon savory

1 tablespoon rosemary

1 tablespoon thyme

1 tablespoon oregano

1 tablespoon basil

1 teaspoon fennel seed

1 teaspoon lavender

TUSCAN HERB SALT

Sprinkle this over bread dough brushed with an egg wash before baking, or wherever you want a pinch of salt with a punch of herbal flavor.

¼ cup each fresh basil, mint, sage, rosemary, thyme, and marjoram, leaves only, loosely packed

4 cloves garlic

2 teaspoon fennel seed

¾ cup kosher or sea salt

In a food processor or blender or by hand, finely chop herbs and garlic. If using a food processor or blender, add half of the salt and the fennel seed and pulse briefly. Then add the rest of the salt and mix. If not using a machine, combine the chopped herbs, garlic and fennel seed with the salt in a large bowl and press the herbs and the salt together with the back of a large mixing spoon, bruising the herbs to release their oils into the salt.

Spread the herb salt on a baking sheet in a thin layer and allow to dry for several days. When no moisture remains, store in jars with lids.

How to Make Herbal Oils

1. Place the dried herbs and any other ingredients into the dry, sterilized bottles.

2. Warm the olive oil below a simmer (don’t boil it) just until you can see some movement in the pan, but no bubbles. While the oil is still hot, use a funnel to pour it into the bottles over the herbs.

3. When the oil is cool, cap it and let it sit for a minimum of two weeks to allow it to absorb the flavors of the herbs. Pour it through a strainer into new sterilized bottles, removing the steeped herbs. If you like, add a sprig or two of a dried herb or a few peppercorns to the new bottles for visual interest, then re-cap. Begin using your oils.
